Mornings often sound something like this around my home…
Evi: “Mom, can I have a popsicle for breakfast?”
Me: “Sure babe, what flavor?”
Think that’s weird? I definitely didn’t eat popsicles for breakfast when I was a kid. Of course we always had them around, even in the winter. But we had the random assortment of bright blue, neon green, and cherry red variety. You know, the kind filled with artificial food dyes and ZERO nutritional value. But I feel 100% confident in my choice as a mother to allow and even encourage my toddler to fully enjoy a delicious popsicle at the start of her day. I guess that’s what happens and you make your own popsicles and fill them with quality, nutrient-dense ingredients!
My super yummy Dairy Free Mango Lassi Popsicles are part of a fantastic series called Beat the Heat Summer Popsicle Series! Some of my favorite bloggers and I from the Oily Abundance team have gotten together to bring you some of our favorite homemade popsicle recipes that all have something in common: we’re each using a special secret ingredient 🙂 We just saw a fantastic recipe for Dairy Free Orange ‘Cream’sicles using orange essential oil from Beats and Okra that makes me nostalgic for the orange creamsicles I enjoyed as a kid. Now it’s my turn to give you a recipe for Mango Lassi Popsicles, and my secret ingredient is Ginger Essential Oil!
There’s a local Indian restaurant here in my home town that serves up a fantastic Mango Lassi and my little one asks for one every time we go. If you’ve never had one or even heard of it, a Mango Lassi is a creamy, delicious, spiced up, sweet yogurt drink that is super satisfying. The ingredients are pretty common, so it’s really easy to make at home. But of course, I love to put my spin on everything, so I made my version dairy free and added a bit of spice by way of a drop or two of ginger essential oil! I’ve also swapped out the traditional white sugar used for sweetness for a more nutritious option- raw honey! Of course, if your little one is under the age of 1 year old you’ll want to omit the honey. I would juts leave out the sweetener altogether in that case. If you have nice ripe mangoes, it should be sweet enough!
A word on popsicle molds! I’ve tried a couple of different kinds. These silicon molds from Norpro are great because they’re made of food grade silicon so you don’t have to worry about the BPA in plastic molds or any nonsense like that. However, for my little one (she’s two) they are a bit difficult to maneuver. She can’t quite handle pushing up the popsicle without having it flop out the top!
I also have these Groovy Freezer Popsicle Molds. They are made of plastic, which stinks. They’re BPA free, but that doesn’t really mean a whole lot, considering that manufacturers just replace the BPA with BPS. To read more about that, check out this post from Body Unburdened on Why BPA-Free is a Load of B(P)S. However, these molds were super toddler-friendly. They have a built in drip-guard which is awesome if you live in the land of toddlerville. They also pop into a handy little stand for easy freezing. I found that the silicon molds sort of floated all around my freezer. So it’s your choice. Pick a mold any mold!
Really all you need to make a popsicle is one ingredient: FRUIT! After you pick a fruit, you can pretty much add in anything you want in order to make it your own. In this recipe, I’ve chosen to swap out the traditional yogurt for a dairy-free and super nutritious option- coconut milk! I love the stuff and I always have it in my pantry. I also use fresh mango, but if you can’t find fresh, ripe mango, feel free to use organic frozen mango chunks. As I mentioned, I also add in a drop of ginger essential oil, and that’s really all you need. The stuff is potent! Ginger is not typically traditional to a mango lassi, but I love it in these popsicles.
A word on essential oils. When dealing with essential oils, it’s very important to make sure you’re using pure, high quality essential oils. In this case, we’re ingesting them so it’s particularly important. You want to make sure that your oils aren’t cut with any chemical fillers and that they haven’t been sprayed with pesticides or fungicides. On with the recipe!
- Place all ingredients in a high speed blender, and puree until smooth
- Taste and adjust for sweetness
- Pour mixture into molds and freeze
