Alright peeps. I know I call it a “breakfast” bake, but what I really mean is a “breakfast, lunch, dinner or snack” bake. I just call it a breakfast bake because the main ingredient is eggs and usually when you think of eggs, you think of breakfast right?
BLT’s are traditionally bacon, lettuce and tomato. But you guys know that I like to break from tradition. So in this case, the “L” is not for lettuce. Oh no. It’s for LEEK! I love leeks. They’re sort of a mild onion-y garlic-y flavor and completely delicious.
As I said, this dish is not just for breakfast. When you’re having a rough day and you’re just way behind schedule, or you JUST PLAIN DON’T FEEL LIKE COOKING, make this bake for dinner. Serve it with a side salad. Then pop it in the fridge, and serve it up for breakfast the next morning. It’s fab leftover- cold or re-heated.
Did I mention that this dish is a major budget saver too? For what I pay for a dozen pastured eggs (about $4) and a half a pound of pastured bacon (about $3.50), I’ve got dinner. Not bad eh?
