I think that radishes are a vegetable that are way under-utilized. They have a great kick and crunch to them that can add so much to the flavor and texture of a dish. One of my favorite ways to eat radishes is in a classic french application which is simply topped with a schmear of butter (pastured of course) and a dash of sea salt. It’s delicious. If you have never had radishes that way, I highly recommend it.
In addition to being super tasty, radishes are super nutritious. Radishes belong to the cruciferous family of vegetables, the same family as kale, broccoli, and cabbage. And just like the other vegetables in the fam, radishes have an awesome antioxidant profile, which makes them major cancer fighters!
Radishes are great for digestion! They contain a number of sulfer-based chemicals that keep your bile flowing, which promotes great liver and gallbladder function. Additionally, radishes are packed with vitamin C, which makes them an immune-boosting superfood!
In this Strawberry and Radish Antioxidant Salad, the radishes take center-stage. They are a fantastic spicy, crunchy counterpart to the sweet strawberries. The lime juice adds a bit of citrus punch, while the mint and scallion add plenty of summery freshness! Enjoy!
- 1 lb strawberries- washed, trimmed and quartered
- 6-7 radishes, medium diced or thinly sliced on a mandolin
- 3 scallions, sliced
- 12-15 mint leaves, torn
- juice of 1 lime
- 2 tbsp raw honey (here is my fave kind)
- sea salt and pepper
- Toss everything in a bowl and mix it up. Taste and adjust seasoning.
- Let sit in the fridge to allow the flavors to marry for 15 minutes. Enjoy!
